25 canned grape leaves
4 tablespoons fish sauce
1/2 cup water
2 tablespoons vinegar
2 teaspoons sugar
3/4 teaspoon crushed red pepper flakes
2 cloves garlic , minced
3 tablespoons gingerroot , peeled and shredded
2 tablespoons carrots , shredded

Instructions

1.In a large bowl, combine the ground beef, minced garlic, nuoc nam, minced gingerroot, fresh cilantro, sugar, black pepper, and chopped green onion until well combined.
2.Take one canned grape leaf and lay it out onto a clean work surface. Place 1 tablespoon of the beef mixture onto the center of the grape leaf.
3.Fold the bottom end of the grape leaf over the beef mixture, then fold in the sides, and roll up tightly. Repeat with the remaining grape leaves and beef mixture.
4.In a separate bowl, whisk together the fish sauce, water, vinegar, sugar, crushed red pepper flakes, minced garlic, shredded gingerroot, and shredded carrots. Set aside.
5.Preheat a grill or grill pan to medium-high heat.
6.Brush the grape leaf rolls with the marinade and place them onto the grill. Grill for 3-4 minutes per side, until crispy and lightly charred.
7.Remove from the grill and serve immediately with the remaining marinade for dipping.
