1/2 lb lean pork loin , cooked
1/2 lb shrimp , cooked
1 bunch cilantro
1 cup firmly packed basil leaves
2 cups blanched bean sprouts
1 head lettuce , shredded
1 package rice vermicelli
2/3 cup hoisin sauce
2/3 cup coconut milk
1/4 cup rice vinegar
3/8 cup chopped onion
1/2 cup chopped roasted peanuts
Goi Cuon is a Vietnamese dish that is both light and savory. It consists of rice paper wrappers filled with vermicelli, meat or shrimp, lettuce, bean sprouts, cilantro and basil. You roll up the ingredients in the soft rice paper and dip it into the Vietnamese dipping sauce to get the perfect balance of flavors. Instructions

1.Cook pork loin and shrimp and slice them thinly.
2.Prepare a large, shallow bowl of warm water.
3.Dip a sheet of rice paper into the water for just a few seconds to soften it.
4.Place lettuce leaf towards the bottom of the wrapper and roll it up halfway.
5.Fill in the remaining space with vermicelli, shrimp, pork, cilantro, basil, and bean sprouts.
6.Roll it tightly making sure to tuck in the sides of the rice paper.
7.Repeat with all rice papers.
8.To make the dipping sauce, mix hoisin sauce, coconut milk, rice vinegar, chopped onion, and chopped roasted peanuts in a bowl.
