Ingredients

1 lb cooked crabmeat ( imitation crab may also be used )
1 lb fresh asparagus , ends snapped , woody stems trimmed
1 tablespoon cooking oil
1/4 cup water
1 head red leaf lettuce
1 cup alfalfa sprout
1 cup shredded carrot
1 cup fresh basil leaf
1 cup fresh cilantro stem
1 package rice paper sheet ( banh trang )
paper towels
1/2 cup hoisin sauce
2 cloves garlic , minced
3 tablespoons soy sauce
2 teaspoons sugar
sesame oil , few drops
1 tablespoon chopped peanuts
1/2 cup water
1/4 cup fish sauce ( nam pla )
1 tablespoon sugar
1 clove garlic , minced
1/4 teaspoon cayenne pepper
1/2 lime , juice of
Vietnamese Soft Rolls with Crab is a classic Vietnamese appetizer that is often served as a light and refreshing snack. The dish is made from thin, translucent sheets of rice paper that are filled with a combination of cooked crabmeat, fresh vegetables like lettuce, carrots, and sprouts, asparagus and herbs like fresh cilantro and basil to create a light, healthy appetizer that packs a punch of flavor. Instructions

1.In a skillet, heat the cooking oil over medium heat. Add asparagus and stir-fry for 1-2 minutes until tender-crisp. Add water and stir-fry for another minute. Set aside.
2.In a small bowl, whisk together the hoisin sauce, minced garlic, soy sauce, sugar, and sesame oil.
3.In another bowl, mix together the fish sauce, sugar, minced garlic, cayenne pepper, and lime juice.
4.Prepare all the ingredients: shred the lettuce, prepare alfalfa sprouts, shredded carrot, fresh basil and cilantro. After grouping the ingredients separately, soak a sheet of rice paper in warm water for 10-15 seconds until it softens and lay it on a slightly damp paper towel. Place crabmeat, asparagus, lettuce, alfalfa sprouts, shredded carrot, fresh basil leaf and cilantro stem on the rice paper. Fold sides of rice paper inwards and roll the rice paper away from you, over the filling, and press it firmly. Repeat with remaining ingredients.
5.Serve rolls with dipping sauce and garnish with chopped peanuts.
