2 1/2 cups ground pork
4 garlic cloves , crushed
2 stalks lemongrass , sliced
1 bunch cilantro , chopped
2 red chilies , seeded and diced
1 tablespoon brown sugar

1 egg , beaten

Instructions

1.In a large bowl, combine pork, crushed garlic, sliced lemongrass, chopped cilantro, diced red chilies, brown sugar, fish sauce, and beaten egg. Mix well and let marinate for 30 minutes.
2.Meanwhile, prepare the dipping sauce by combining crushed garlic, seeded and chopped red chili pepper, sugar, chopped lime, fish sauce, and chopped peanuts. Mix well and set aside.
3.Soak rice sticks in hot water for 10 minutes. Drain and rinse with cold water. Set aside.
4.Preheat grill to medium-high heat. Thread marinated pork onto skewers and grill for 7-9 minutes per side or until cooked through.
5.Serve pork ball brochettes with lettuce leaves, grated carrots, basil leaves, mint leaves, rice sticks, and dipping sauce on the side.
