Ingredients

200 g glutinous rice , soaked overnight
100 -150 g mung beans , soaked overnight
100 g pork , cut into chunks , seasoned with
salt and pepper
1/2 teaspoon salt
Banh Chung is a Vietnamese rice cake that is commonly consumed on special occasions such as Tet (Vietnamese New Year). It's made with sticky rice, mung beans, and pork, and is wrapped in banana leaves and boiled for several hours to achieve the desired consistency. The cake has a dense and chewy texture, with a slightly salty taste that is balanced by the sweetness of the mung beans.

Instructions

1.Start by mixing the soaked rice with salt and ½ tsp of chicken stock powder.
2.Drain and add the soaked mung beans to a pot of boiling water and let it come to a boil.
3.Layer the banana leaves, followed by the rice and mung bean mixture and then the pork pieces.
4.Wrap the mixture tightly with banana leaves, tie it up with twine and then boil it for 4-6 hours.
5.Take the banh chung out of the pot, and let it cool for about 30 minutes before serving.
