Ingredients

1 mango , peeled and julienned ( sliced into thin strips )
1 carrot , cut into small matchsticks
1 cucumber , cut into small matchsticks
1 red onion , sliced thin ( optional )
1 red jalapeno chile , chopped
1 lime , juice of
1/2 cup roasted cashews or 1/2 cup peanuts , chopped
1/4 cup fresh cilantro
1/4 cup fresh basil
3/4 cup roasted cashews
1/3 cup coconut milk , plus more if needed
2 limes , juice of
1 teaspoon Thai red curry paste
2 -4 tablespoons sweet Thai sweet chili sauce
1 lb ground pork sausage ( or links and casing removed )
2 tablespoons sesame oil
2 tablespoons soy sauce
2 tablespoons fish sauce
1 head butter lettuce
1/2 cup Thai sweet chili sauce , for dipping

Instructions

1.In a large bowl, combine the ground pork sausage, sesame oil, soy sauce, and fish sauce. Mix well to combine.
2.Form the mixture into small meatballs. Place on a baking sheet lined with parchment paper.
3.Preheat oven to 375 degrees Fahrenheit. Bake for 20-25 minutes, or until cooked through.
4.Meanwhile, prepare the mango salad by combining the mango, carrot, cucumber, red onion (if using), and red jalapeno chile. Squeeze lime juice over the top. Mix well to combine.
5.Prepare the cashew sa by placing the roasted cashews, cilantro, basil, coconut milk, lime juice, Thai red curry paste, and sweet Thai chili sauce in a food processor. Pulse until a smooth paste forms. Add more coconut milk if needed.
6.To assemble, take a butter lettuce leaf and add a few meatballs, a spoonful of mango salad, and a drizzle of cashew sa. Roll up the lettuce leaf to form a wrap. Serve with extra sweet Thai chili sauce for dipping.
