Ingredients

6 ounces capellini or 6 ounces other thin spaghetti
3 tablespoons white wine vinegar
1 1/2 tablespoons soy sauce
2 garlic cloves , minced
4 teaspoons sugar
1/4 teaspoon hot red pepper flakes
1/4 teaspoon salt
1/8 teaspoon anchovy paste
1/4 cup packed fresh mint leaves , shredded , plus 2 mint sprigs for garnish
1 lb flank steaks or 1 strip steak
1/2 cucumber , seeded cut into julienne strips
1/2 red bell pepper , cut into julienne strips
This Vietnamese-Style Grilled Steak with Noodles is a delicious and healthy meal inspired by the vibrant and flavorful cuisine of Vietnam. The marinated steak is grilled to perfection and paired with capellini noodles tossed in a tangy and fragrant sauce. Instructions

1.Cook capellini according to package instructions. Drain and rinse under cold water.
2.In a small bowl, whisk together white wine vinegar, soy sauce, garlic, sugar, hot pepper flakes, salt, anchovy paste, and shredded mint leaves.
3.Transfer half of the marinade to a small bowl and set aside. Add remaining marinade to a ziplock bag with the steak, cucumber, and red pepper. Marinate in the refrigerator for at least 30 minutes or up to 12 hours.
4.Preheat grill on high heat. Remove the steak from the marinade and discard marinade. Grill the steak for about 5 minutes on each side or until desired doneness is reached. Let the steak rest for 5 minutes before slicing thinly.
5.In a large bowl, toss the capellini with reserved marinade until coated.
6.Serve the grilled steak with noodles and julienned cucumber and red pepper on top, garnished with mint sprigs.
