Ingredients

1 small cucumber , peeled and julienned
1 small carrot , peel and julienned
1/4 cup mint leaf
3 tablespoons pickled ginger , finely sliced ( optional )
40 g baby dou miao or 40 g snow pea sprouts
1 bunch chives , cut in 9 cm lengths
10 g enoki mushrooms ( the Japanese golden mushroom )
rice paper sheet
3 tablespoons freshly squeezed lime juice
3 tablespoons Thai fish sauce
1 clove garlic , crushed
2 small red chilies , finely sliced
1 tablespoon brown sugar or 1 tablespoon palm sugar

Instructions

1.Prep your vegetables by washing and cutting them into small pieces.
2.Place the cucumber, carrot, mint leaves, pickled ginger, snow pea sprouts, chives and enoki mushrooms into separate bowls.
3.In a small mixing bowl, whisk the lime juice, Thai fish sauce, garlic, red chilies and brown sugar together.
4.Fill a pan with hot water and dip one rice paper sheet at a time for about 10 seconds. Remove it from the water and spread it on a damp plate.
5.Working quickly, place some of the vegetables and herbs in a row across the center of the rice paper sheet, leave some space empty on the top and bottom edges to fold the rolls.
6.Roll up the rice paper like a burrito starting from the bottom, then fold in the sides of the rice paper to enclose the filling. The rolls should be tight and firm. Repeat the process with the remaining ingredients.
7.Serve with your dipping sauce of choice and enjoy!
