Ingredients

2 cups uncooked glutinous rice
2 cups water
2 cups thick coconut milk
1 1/2 cups dark brown sugar or 1 1/2 cups shaved palm sugar

Instructions

1.Soak the glutinous rice in water overnight.
2.Preheat the oven to 350°F (175°C), and grease a 9x13 inch baking dish.
3.Drain the rice and add to a large pot with 2 cups of water. Bring to a boil and then reduce the heat to low, cover, and let simmer for 15-20 minutes or until the water has been absorbed.
4.In a separate pot, add the coconut milk and sugar, and bring to a boil. Reduce the heat to low and simmer for another 15-20 minutes, stirring constantly until the mixture becomes thick and syrupy.
5.Add the cooked rice to the syrupy coconut mixture and stir until well combined.
6.Pour the mixture into the prepared baking dish and bake for 20-25 minutes or until lightly golden brown on top.
7.Allow to cool before slicing into squares.
