Ingredients

1/2 cup dried wood ear mushrooms
2 tablespoons vegetable oil
8 shallots , chopped
1 garlic clove , crushed
10 ounces ground pork or 10 ounces ground chicken
1 cup rice flour
3 cups water
salt
1 tablespoon sugar
1/4 cup water
2 tablespoons fish sauce
1 tablespoon rice wine vinegar
1 tablespoon fresh lime juice
2 garlic cloves , finely chopped
1 red chili pepper , shredded
1/4 cup cilantro leaf
1/2 cup fried shallots
Stuffed Steamed Rice Wrapper Rolls, also known as Banh Cuon, is a popular Vietnamese dish that is often eaten for breakfast or as a light snack. These soft and silky steamed rice rolls are filled with savory ground pork or chicken and wood ear mushrooms. The sauce made with fish sauce, chili peppers, and lime juice adds a tangy and spicy kick to the dish. Instructions

1.Soak the dried mushrooms in warm water until hydrated, then drain and finely chop them.
2.Heat 2 tablespoons of vegetable oil in a pan over medium heat and sauté the shallots and garlic until fragrant.
3.Add the ground pork or chicken to the pan and cook until browned.
4.In a mixing bowl, combine rice flour, water, and salt. Stir well to dissolve any lumps.
5.Grease a steamer tray and pour a thin layer of the rice flour mixture onto it. Steam on high heat for 2 minutes or until the layer becomes firm.
6.Take out the steamed rice layer and gently roll it up.
7.Repeat the process until you have 7-8 rolls.
8.In a separate pan, mix together sugar, water, fish sauce, rice wine vinegar, lime juice, garlic, and red chili pepper. Cook until the mixture thickens a bit.
9.Finally, slice the steamed rice rolls into 1-inch pieces and place each piece flat on a plate. Add the cooked pork/chicken and mushrooms on top of each piece.
10.Drizzle the sauce over each roll and finish with cilantro leaf and fried shallots. Serve hot or at room temperature.
