Ingredients

1 cup vermicelli rice noodles
8 -12 medium shrimp
4 rice paper sheets
4 lettuce leaves
20 mint leaves ( or more )
1 bunch cilantro
Shrimp Spring Rolls (Goi Cuon) are a traditional Vietnamese appetizer that is light and healthy. They are made with fresh ingredients including rice noodles, shrimp, vegetables, and herbs, all wrapped in rice paper. Instructions

1.Boil water in a large pot and cook the vermicelli rice noodles for 3-5 minutes.
2.Remove the noodles from the pot and rinse them in cold water before draining and setting aside.
3.Peel and devein the shrimp it should end up with very small tail
4.Cook the shrimp in boiling water for 2 minutes until they turn pink and are cooked through. Drain and set aside.
5.Fill a shallow bowl with warm water and dip one sheet of rice paper in the water for 10 seconds.
6.Place the rice paper on a flat surface and place lettuce leaves on the lower half of the sheet.
7.Place the vermicelli noodles, mint leaves, and cilantro on top of the lettuce leaves.
8.Place the shrimp on top of the herbs and vegetables.
9.Fold the sides of the rice paper towards the center and roll up the spring roll tightly.
