Ingredients

3 ounces vietnamese cellophane noodles , cooked according to pkg . directions
2 cups bean sprouts
2 carrots , thinly sliced
1 large beet , thinly sliced
1 fresh red chili pepper , cut into circles
1/4 cup fresh cilantro , chopped
3/4 cup salted peanuts , chopped
2 teaspoons sesame oil
1 lime , juice of
sea salt & freshly ground black pepper , to taste
1 teaspoon sugar
20 round rice paper sheets
20 cooked medium shrimp , tails off , halved lengthwise
40 mint leaves
1/4 cup rice wine vinegar
2 tablespoons fish sauce
1/4 cup hot water
2 tablespoons sugar
1 lime , juice of
1 teaspoon garlic , minced
1 teaspoon sambal oelek ( red chili paste )
2 tablespoons grated carrots
2 tablespoons grated daikon radishes
Vietnamese Shrimp Rolls are a traditional Vietnamese dish that is popular both as a street food and a healthy appetizer. These rolls are made with rice paper, filled with cooked shrimp, cellophane noodles, bean sprouts, beets, carrots, peanuts, and fresh herbs like cilantro and mint. This dish is often served with a sweet chili dipping sauce that adds a nice contrast to the savory filling of the rolls. Instructions

1.In a bowl, place the cooked noodles, bean sprouts, carrots, beet, fresh red chili pepper, cilantro, peanuts, sesame oil, lime juice, sea salt, ground black pepper, and sugar. Mix to combine.
2.Fill a large shallow dish with warm water. Dip one rice paper sheet into the water for 10 seconds or until it is soft and pliable. Carefully remove and lay it on a damp kitchen towel.
3.Place shrimp, cut side up, in a row on the bottom third of the rice paper. Add a spoonful of the noodle mixture on top of the shrimp and top with two mint leaves.
4.Fold the bottom of the rice paper over the filling and tuck it in tightly. Fold the sides towards the center and then roll up tightly.
5.In a small bowl, whisk together the rice wine vinegar, fish sauce, hot water, sugar, lime juice, garlic, sambal oelek, grated carrots, and grated daikon radishes to make the dipping sauce.
6.Serve the rolls with the dipping sauce on the side.

PROS
