Ingredients

10 sheets spring roll wrappers ( for fried spring rolls )
200 g ground pork
100 g dried rice vermicelli
2 spring onions
1 tablespoon hoisin sauce
1/3 cup dried shiitake mushroom
2 garlic cloves
1 carrot , chopped roughly
1 egg
1 egg white
1 pinch salt
1 teaspoon ground black pepper
vegetable oil , 2 cups for frying
1 cup baby cos lettuce
1/4 cup chopped coriander
1/4 cup chopped mint
1/4 cup crushed peanuts
1/3 cup chopped cucumber
1/4 cup fried shallots ( bought already cooked in a packet in Asian aisle )
1 small red chili pepper
1 tablespoon fish sauce
1 lime , juice of
1 teaspoon sugar , dissolved in
1 tablespoon boiling water
1 cup bean sprouts
Bun Chao Gio is a popular Vietnamese dish that consists of spring rolls served with rice vermicelli, greens, and a tangy fish sauce dressing. The dish is fresh, lively, and full of flavor. Instructions

1.Soak shiitake mushrooms in hot water for 30 minutes, then drain and finely chop. Set aside.
2.Combine ground pork with garlic, egg white, salt, pepper, and 1 tablespoon of finely chopped spring onion. Mix well and set aside.
3.Boil rice vermicelli until tender, then rinse and drain. Set aside.
4.Cut spring roll wrappers into 4 squares each (20 squares in total). Place a small amount of pork filling in the center of each square. Fold the wrapper into a spring roll. Seal the edges with a little bit of egg. Repeat until all the filling is used up.
5.Heat oil in a deep saucepan. Fry the spring rolls in batches until golden brown. Drain on paper towels.
6.To prepare the dressing, mix fish sauce, lime juice, sugar, and 1 tablespoon of boiling water.
7.To assemble the dish, divide cooked noodles between 4 serving plates. Place a few baby cos lettuce leaves on top of the noodles. Add chopped coriander, mint, cucumbers, and bean sprouts. Place the fried spring rolls on top. Garnish with chopped red chili, remaining spring onion, crushed peanuts, and fried shallots. Drizzle dressing over the top and serve.
