Stir-Fry Chicken with Lemon Grass (Ga Xao Xa) is a popular dish across Southeast Asia, known for its bright flavors, spicy kick, and healthy cooking technique. The use of fresh lemongrass lends a citrusy-sweet flavor while the chillies add heat to the dish. Boneless chicken thighs are a leaner cut of meat that works well in stir-fries and only takes a few minutes to cook. The dish is usually served with steamed rice and some sliced cucumbers or fresh herbs as a simple, yet satisfying meal.
