Ingredients

1/4 cup vietnamese fish sauce , plus ( nuoc mam )
1 tablespoon vietnamese fish sauce ( nuoc mam )
1 tablespoon potato starch , plus
1 teaspoon potato starch
1 teaspoon baking powder
1 teaspoon sugar
1/4 teaspoon fresh ground white pepper
2 lbs trimmed boneless beef shank
4 cloves garlic ( crushed )
1 teaspoon oriental sesame oil
1/4 cup vegetable oil ( for shaping meatballs )
Thit Bo Vien, or Vietnamese beef balls, are a popular dish in Vietnamese cuisine. They can be enjoyed as a snack or as a main meal. The beef balls are tender, flavorful, and incredibly easy to make. Instructions

1.In a large mixing bowl, whisk together 1/4 cup fish sauce, 1 tablespoon fish sauce, 1 tablespoon potato starch, 1 teaspoon potato starch, 1 teaspoon baking powder, 1 teaspoon sugar, and 1/4 teaspoon ground white pepper.
2.Cut the beef shank into small pieces and add it to the mixing bowl.
3.Add 4 cloves of crushed garlic and 1 teaspoon of sesame oil to the mixing bowl.
4.Mix everything together well and let it marinate for 10 minutes.
5.Form meatballs with the mixture. Wet hands help the mixture to not stick.
6.Heat oil in a large non-stick skillet over medium-high heat. Add meatballs, and cook for 4 minutes, shaking frequently to brown the meatballs on all sides.
