Ingredients

12 ounces filet fresh salmon , bones and skin removed
1 tablespoon soy sauce
2 teaspoons brown sugar
freshly cracked pepper
1 large daikon radish , peeled and cut into matchstick lengths
2 -3 carrots , peeled and cut into matchstick lengths
3 -4 radishes , sliced in rounds
3/4 cup rice vinegar
3/4 cup sugar
1/2 cup water
1 teaspoon salt
4 baguette
1 English cucumber
mayonnaise , good quality ( can add squeeze of lime and-or Sriracha )
12 pickled jalapeno chile , sliced thin
8 -12 sprigs cilantro

Instructions

1.Preheat the oven to 400°F.
2.In a small bowl, combine the soy sauce, brown sugar, and black pepper. Brush this mixture onto both sides of the salmon.
3.Place the salmon on a baking sheet lined with parchment paper. Roast in the oven for 15-20 minutes or until cooked through.
4.In a separate bowl, mix together the rice vinegar, sugar, water, and salt. Add in the daikon radish, carrots, and radishes, making sure they are fully submerged. Allow to pickle for at least 15 minutes.
5.Slice the baguette into four equal portions and lightly toast until warm. Spread mayonnaise onto each half of the baguette. Top the bottom half with the pickled vegetables and roasted salmon. Add slices of English cucumber, jalapeno chile, and cilantro on top of the salmon. Close with the top half of the baguette.
