Ingredients

1 1/2 cups julienned daikon radishes
1 1/2 cups julienned carrots
3/4 cup distilled white vinegar
3/4 cup sugar
2 lbs ground pork
6 garlic cloves , minced
2 jalapeno chiles , seeded and diced
1 tablespoon minced ginger
2 tablespoons vietnamese fish sauce ( nuoc nam )
2 tablespoons soy sauce
1 tablespoon Chinese five spice powder
2 tablespoons sugar
1 lime , zested and juiced
2 -3 tablespoons vegetable oil , for brushing the grill rack
6 good quality sesame-seed kaiser rolls , split
6 tablespoons salted butter , softened
6 tablespoons mayonnaise
6 tablespoons spreadable pork pate or 6 tablespoons liver pate
1/2 English cucumber , peeled and thinly sliced
2 jalapeno chiles , thinly sliced
18 fresh fresh cilantro stems
Vietnamese Bistro Burgers are a fusion of classic American burgers with Vietnamese flavors. These burgers are made with ground pork and topped with a slaw made of julienned daikon radishes, carrots, and Vietnamese spices. They are also served with spreadable pork or liver pate, which is a common food in Vietnam. The result is a juicy, flavorful burger that combines the best of both worlds. Instructions

1.In a large bowl, combine julienned daikon radishes, carrots, distilled white vinegar, and sugar. Toss well.
2.In a separate bowl, combine ground pork, minced garlic, diced jalapeno chiles, minced ginger, Vietnamese fish sauce (nuoc mam), soy sauce, Chinese five spice powder, sugar, lime zest, and lime juice. Mix well.
3.Take 1/2-cup meat mixture, form a patty, and repeat until all the mixture is used up.
4.Preheat grill to medium-high heat. Brush grill racks with vegetable oil.
5.Grill burgers for 4 minutes on each side, or until done.
6.Toast kaiser rolls on grill for 2 minutes on each side until golden brown.
7.In a small bowl, mix together softened salted butter and mayonnaise.
8.To assemble the burger, spread the butter mayo mixture onto the bottom half of each roll. Place spreadable pork or liver pate on top, followed by the burger, sliced cucumber, jalapeno, and cilantro. Cover with the top bun.
