Ingredients

1 large opo squash , Peeled and sliced thinly
6 cups water
1/2 cup onion , thinly sliced
1/2 - 1 lb shrimp , peeled and diced
4 -6 green onions , diced , separated in half
1/4 - 1/2 cup cilantro , coarsely chopped , separated in half
1 -2 teaspoon white pepper , can use black
2 -3 tablespoons fish sauce , separated in half
1 teaspoon sugar
1 teaspoon sesame oil
Canh Bau Tom, also known as Vietnamese Opo Squash Soup, is a delicious and healthy option for those who want a quick and easy meal. Instructions

1.In a pot, bring 6 cups of water to a boil.
2.Add the thinly sliced opo squash and onion to the pot, and let it simmer for about 10 minutes.
3.Add half of the diced green onions, half of the chopped cilantro, white pepper, 1-2 tablespoons of fish sauce, and sugar to the pot. Let it cook for another 5 minutes.
4.Add the diced shrimp into the pot and let it cook for a few more minutes until the shrimp turns pink. Add in the remaining fish sauce and sesame oil.
5.Serve hot and garnish with the remaining green onions and cilantro.

For those with shellfish allergy, the shrimp can be substituted with chicken or tofu.
