Ingredients

2 cello bags spinach
2 bunches scallions ( cut roots off and then cut in segments )
2 bunches parsley ( curly or italian and cut the stems off )
1 bunch cilantro
2 lbs chicken ( whatever meat you prefer ) or 2 lbs beef ( whatever meat you prefer )
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup lemon juice
6 dried lemons
1 teaspoon canola oil
Ghormeh Sabzi is a popular Persian stew that is typically made with lamb or beef, but can also be made with chicken or vegetarian options. Instructions

1.Cut the scallions and set aside.
2.Mince the parsley and cilantro, and mix the two together in a bowl.
3.Wash and dry the two bags of spinach, and coarsely chop them into bite-sized pieces.
4.Cut the meat into 1-inch cubes.
5.Heat the canola oil in a large pot over medium-high heat.
6.Add the meat and cook for about 10 minutes, until browned on all sides.
7.Add the scallions and continue to cook for another 5 minutes.
8.Add the spinach, parsley and cilantro mixture, nutmeg, cinnamon, and lemon juice to the pot.
9.Mix everything together and add enough water to cover the ingredients.
10.Bring the mixture to a boil and then reduce to a simmer.
11.Cut the dried lemons in half and add to the pot.
12.Cover the pot and let it simmer for about 2 hours, or until the meat is tender.
13.Add salt and pepper to taste and serve hot with rice.
