Ingredients

2 1/4 teaspoons yeast
1 cup sour cream , room temp
3 1/4 cups sifted flour
1/2 teaspoon salt
1 cup chilled butter , unsalted
1 egg
1 tablespoon vegetable oil
1 teaspoon lemon juice
2 egg yolks , beaten
1 teaspoon yogurt
3 tablespoons melted butter ( for brushing the dough with )
1 cup melted butter
2 cups sifted flour
1 cup sugar
1 cup walnuts , finely chopped ( optional )
1 teaspoon vanilla
1 teaspoon cardamom

Instructions

1.In a small bowl, dissolve yeast in sour cream and set aside for 5 minutes.
2.In a large bowl, mix together 3 1/4 cups sifted flour and salt. Cut in 1 cup chilled butter until the mixture is crumbly.
3.Beat one egg and add to the flour mixture along with the yeast mixture, vegetable oil, lemon juice, beaten egg yolks, and yogurt. Mix well.
4.Knead dough until it is smooth and elastic. Divide dough into 3 parts and place in the refrigerator to chill for at least 30 minutes.
5.In a separate bowl, mix together 2 cups sifted flour and sugar. Cut in 1 cup melted butter until the mixture is crumbly. Add finely chopped walnuts, vanilla, and cardamom. Mix well.
6.Remove one part of the dough from the refrigerator and roll it into a large rectangle. Spread the walnut mixture over the dough, leaving a 1-inch border all around. Roll the dough up tightly and brush with melted butter.
7.Repeat the above step with the other two parts of the dough.
8.Preheat oven to 350 degrees F and bake the pastries for 30 minutes or until they are golden brown.
