40 -50 grape leaves
1 1/2 cups rice
2 tomatoes , chopped
5 green onions , chopped
1/2 cup parsley , chopped
2 tablespoons mint , chopped
1/2 cup olive oil
salt & pepper
2 potatoes , sliced
2 -3 large tomatoes , chopped
3/4 cup olive oil
3/4 cup lemon juice
salt & pepper

Warak Enab, also known as Stuffed Grape Leaves, is a popular dish in Qatar and the Middle East. It is a vegetarian dish made with boiled grape leaves that are stuffed with a flavorful rice mixture and cooked in a mixture of olive oil and lemon juice. The dish is often served as an appetizer, side dish, or a main meal. The flavors are exotic and refreshing and make an excellent addition to any Mediterranean-style meal. It is not only healthy but can also be a great option for a vegetarian feast.

Instructions

1.Rinse grape leaves and remove stems.
2.In a medium bowl, combine rice, chopped tomatoes, chopped green onions, chopped parsley, chopped mint, 1/2 cup olive oil, salt, and pepper.
3.Place one grape leaf shiny side down and put 1 teaspoon of the rice mixture on it.
4.Roll the leaf, tucking in the sides as you go. Continue rolling until you have used up all of the grape leaves and rice mixture.
5.In a Dutch oven or large pot, arrange the sliced potatoes and chopped tomatoes in the bottom.
6.Layer the stuffed grape leaves on top of the potatoes and tomatoes
7.In a small bowl, whisk together 3/4 cup olive oil, lemon juice, salt, and pepper.
8.Pour the mixture over the stuffed grape leaves and add enough water to cover them.
9.Cover the pot and cook over medium heat for 1 hour or until the rice is fully cooked. Let it sit for 30 minutes before serving.
10.Serve Warak Enab with sliced black or green olives and tomatoes.
