16 ounces collard greens , tough stems removed , leaves chopped
1 tablespoon garlic , minced or 3 garlic cloves
1 1/2 cups diced onions or 1 large onion
2 cups sliced mushrooms or 6 -8 mushrooms
1 red bell pepper , seeded and chopped
1 can fire-roasted tomatoes
1/4 cup raisins
1 can low-sodium chickpeas , drained and rinsed
1/2 teaspoon ground coriander ( or to taste )
1 teaspoon cinnamon ( or to taste )
1/2 teaspoon ground cumin ( or to taste )
1/8 teaspoon crushed red pepper flakes
1/2 teaspoon oil ( to coat pan )
Collards are leafy green vegetables popular in Southern cuisine in the United States. Instructions

1.Heat oil in a pan over medium heat.

7.Cook for 10-15 minutes, stirring occasionally and adding a splash of water if necessary.
8.Serve hot over rice or with a slice of fresh bread.
