Ingredients

1 1/2 lbs chicken legs ( may substitute for white meat , if desired )
1 large onion , thinly sliced into rings
2 tablespoons olive oil
1/8 teaspoon turmeric
1/4 teaspoon paprika
2 -3 teaspoons rose water
1/2 teaspoon ground cardamom
1/4 teaspoon cumin
1/2 teaspoon cinnamon
1/2 cup lime juice ( lemon also works )
1/2 cup brown sugar
3 firm peaches or 3 nectarines
1/4 teaspoon saffron , dissolved in hot water ( optional )

Instructions

1.Heat the oil in a large pot over medium heat. Saute the onions until golden brown.
2.Add the turmeric, paprika, rosewater, cardamom, cumin and cinnamon, and stir for 1 minute.
3.Add the chicken to the pot and cook until browned on all sides. Then add the lime juice, brown sugar, and enough water to cover the chicken by about 1 inch.
4.Bring the mixture to a boil, reduce the heat, cover and simmer for about 25-30 minutes or until the chicken is fully cooked.
5.While the chicken is cooking, cut the peaches into wedges and saute them in a separate pan until caramelized.
6.Add the peaches to the chicken mixture and let simmer for another 5 minutes.
7.Serve hot with basmati rice.
