Ingredients

2 eggplants
300 g diced lamb
1 jar passata
1/4 cup olive oil
1/2 cup red wine
1 brown onion
2 garlic cloves
1/2 teaspoon cinnamon
1/4 teaspoon cardamom powder ( optional )
1/2 teaspoon cayenne pepper ( add more if you like it very spicy )
1/2 teaspoon hot paprika
1/2 teaspoon ground coriander
1 bay leaf
2 tablespoons chopped fresh parsley
2 carrots
1/2 cup plain flour
100 g butter
2 1/4 cups milk
1 egg
1/3 cup grated cheese ( any sort , I use cheddar )
1/4 cup grated parmesan cheese
1/2 teaspoon nutmeg
1/4 cup breadcrumbs
salt
pepper
Moussaka is a traditional Greek dish that has been enjoyed for centuries. This version combines spicy ragu with eggplant slices and creamy white sauce to create a comforting and satisfying meal that is sure to be a crowd-pleaser. Instructions

1.Slice the eggplants into 1/2 inch rounds and sprinkle with salt, let sit for 30 minutes and then rinse and dry.
2.Brown the lamb, onion, and garlic in a large pan with olive oil over medium heat.
3.Add the spices, passata, and wine and cook for 10 minutes until the sauce has thickened.
4.Grate the carrots and add them to the sauce.
5.In a separate pan, melt the butter, whisk in the flour, and then slowly add the milk while whisking constantly, cook until thickened.
6.In a casserole dish, layer half of the eggplant rounds, then half of the meat sauce, and then repeat the layers.
7.Beat the egg and whisk it into the white sauce, pour it over the top of the final meat sauce layer.
8.Sprinkle the breadcrumbs and cheese over the top of the dish and bake in the oven at 350 degrees Fahrenheit for 45 minutes.
