Lamb and Pistachio Kebabs With Garlic and Olive Sauce is an exotic and delicious meal that combines Middle Eastern and Mediterranean flavors. Instructions

1.Soak 8 wooden skewers in water for at least 30 minutes before using. Preheat the grill to medium-high.
2.In a large bowl, mix together the ground lamb, onion, garlic, lemon zest, pistachios, salt, and pepper until well combined.
3.Divide the lamb mixture into 8 portions and shape each portion around a skewer, molding it into an elongated shape.
4.Brush the kebabs with olive oil and grill them over medium-high heat, turning occasionally, until browned and cooked through, about 8-10 minutes.
5.While the kebabs are cooking, prepare the garlic and olive sauce. In a small bowl, mix together the Greek yogurt, roasted garlic, olives, fresh mint, and lemon juice until well combined.
6.Serve the hot kebabs with the garlic and olive sauce and some sliced red bell peppers, eggplant, zucchini, and red onion tossed in olive oil with cumin and coriander seeds. Also, serve with a side of green beans and couscous cooked in water with olive oil, garlic, lemon zest and juice.
