Ingredients

36 cloves garlic ( or an equivalent amount of smaller cloves , plus 1 teaspoon minced garlic )
3 tablespoons olive oil
5 lbs first-cut beef brisket , trimmed of excess fat , wiped with a damp paper towel , and patted dry
2 tablespoons red wine vinegar
3 cups beef broth or 3 cups chicken broth , preferably homemade or a good-quality , low-sodium canned
3 -4 sprigs fresh thyme or 2 teaspoons dried thyme
2 sprigs fresh rosemary , plus
1 teaspoon chopped rosemary
salt & freshly ground black pepper
1 teaspoon grated lemon , zest of

Instructions

1.Preheat oven to 350°F (175°C).
2.Peel and crush garlic cloves.
3.In a large dutch oven, heat olive oil over medium-high heat.
4.Season brisket with salt and pepper, then sear in the dutch oven, about 5 minutes per side.
5.Remove brisket from pan and set aside.
6.Add garlic to dutch oven, and cook for 2-3 minutes or until fragrant.
7.Add red wine vinegar and beef broth to pan, scraping up any brown bits on the bottom of the pan as you stir.
8.Add thyme, rosemary, and lemon zest to pan.
9.Bring the mixture to a simmer, then place brisket back in dutch oven, fat side up.
10.Cover the pan and transfer it to the oven. Cook for 3-4 hours or until the brisket is tender and easily pulls apart with a fork.
11.Remove from oven and let rest, uncovered, for 10-15 minutes before slicing.
