Ingredients

2 slices white bread , crust removed
1/4 cup parsley , finely chopped
1/4 cup mint leaf , finely chopped ( NOT dried )
1 egg , lightly beaten
1 small onion , finely minced
1 large garlic clove , finely minced
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 teaspoon sumac
3/4 teaspoon salt
1/2 teaspoon black pepper
1 lb ground lamb
6 pita bread ( I like Arabian Pita Bread )
Lamb koftes are a traditional Mediterranean dish that most commonly uses ground lamb for the meat mixture. Instructions

1.Preheat grill or grill pan over medium-high heat.
2.In a small bowl, combine bread slices with water. Let soak for 2-3 minutes until soft.
3.In a large mixing bowl, combine soaked bread, parsley, mint leaves, egg, onion, garlic, cumin, coriander, sumac, salt, and black pepper. Stir well.
4.Add ground lamb to the mixture and combine with your hands.
5.Divide mixture into 6 equal parts and shape each part into a long sausage-shaped log.
6.Thread each log onto a metal skewer or wooden skewer that has been soaked in water for at least 30 minutes.
7.Cook lamb koftes for 4-5 minutes on each side, or until the internal temperature of the lamb reaches 165°F.
8.Serve hot with pita bread.
