1/4 teaspoon cumin seed
1/4 teaspoon coriander seed
3 medium onions
2 allspice berries
1 cup tomatoes , canned
1 tablespoon tomato paste
2 garlic cloves
1/8 teaspoon salt
1/8 teaspoon pepper , ground
3 tablespoons flour
salt , to taste
pepper , to taste
oil , for frying

Instructions

1.Rinse and clean the fish, then pat dry with paper towels.
2.In a small skillet, toast coriander and cumin seeds for about 2-3 minutes, then grind them in a coffee or spice grinder to make a fine powder.
3.Cut onions into thin slices and cook them in a large skillet, stirring occasionally, until they are translucent.
4.Add crushed garlic and cook for another 2 minutes.
5.Mix the ground spices, allspice berries, salt, and pepper in a small bowl.
6.Put flour and the spice mix in separate shallow bowls.
7.Dredge the fish filets in flour, then in the spice mix, and shake off excess.
8.Heat 1/2 inch of oil in the skillet over high heat until very hot but not smoking.
9.Fry the filets, turning once, until golden brown and crispy, about 2-3 minutes on each side.
10.Drain the fish on a paper towel-lined plate.
11.Serve hot with canned tomatoes and tomato paste on top.
