oil ( for deep frying )
Kubbeh is a popular Middle Eastern dish that has many regional variations. Kubbeh is made by wrapping a shell of bulgur, flour, or potato around a filling of meat, fish, or vegetables. Meat or Mushroom Kubbeh is a hearty and filling dish that consists of a cracked wheat shell filled with ground beef or sautéed mushrooms, onions, and spices and deep-fried until crispy on the outside. It’s usually served with a side of salad or on top of a bed of hummus or tahini. It’s a popular comfort food in the Middle East and can be found in many restaurants and homes alike.

Instructions

1.For the stuffing, heat 2 tablespoons oil in a skillet over medium-high heat. Add 2 chopped onions and cook until tender. If using mushroom, add 1 lb canned mushroom to the skillet and cook for 2 minutes. Add salt, cinnamon, and black pepper and stir. If using meat, add 18 ounces ground beef to the skillet and cook, stirring occasionally until browned. Add 1/4 cup water and simmer until all the liquid has evaporated.
2.For the kubbeh shell, soak 2 cups fine cracked wheat in cold water for 30 minutes, then rinse and drain. Combine the wheat with 4 tablespoons flour, 4 tablespoons breadcrumbs, 1 tablespoon tomato paste, 1 teaspoon cumin, 1 teaspoon salt and knead until smooth, adding water if necessary. Divide the dough into equal portions, shape each into a ball, then flatten into a circle. Fill each circle with stuffing and shape into a ball.
3.Optional: heat 1 tablespoon oil in a skillet over medium heat and cook 1 chopped onion until translucent. Add 1 tablespoon pine nuts and stir. Remove from heat and set aside.
4.Heat oil in a deep pan over medium-high heat. Deep-fry the kubbeh until golden brown. Serve hot with optional onion and pine nuts on top if desired.
