2 kg boneless leg of lamb , butterflied

Instructions

1.Mix together ras el hanout, garlic, honey, lime zest, lime juice, salt, and black pepper.
2.Rub spice mixture all over the leg of lamb, making sure it is thoroughly coated.
3.Cover and let it marinate in the fridge for at least 30 minutes.
4.Preheat oven to 375°F.
5.Place lamb on a roasting rack in a large roasting pan and roast in the oven for 60-75 minutes or until a meat thermometer inserted into the thickest part of the meat registers 135°F for medium-rare.
6.Remove from the oven and let rest for 15 minutes before carving.
