Ingredients

500 g aged beef , ground ( entrecote cut and thin rib cut )
1 onion ( grated or finely minced )
1/4 cup pine nuts , toasted
1 small hot pepper , deseeded and finely minced
3 garlic cloves , finely minced
1 slice bread , soaked in water , squeezed dry and crumbled
1 egg yolk
salt and pepper , to taste
1 teaspoon sweet paprika
1/4 teaspoon cumin
1/4 teaspoon baking soda
3 tablespoons olive oil
1/4 cup date honey
1/4 cup balsamic vinegar
1 tablespoon fresh ginger , finely minced ( I used a Microplane )
1 tablespoon brown sugar
1/4 cup beef broth
salt and pepper
1 bunch fresh parsley , coarsely minced
1/2 cup olive oil
1 small hot pepper , deseeded
1/4 cup white vinegar
3 -5 garlic cloves
salt and pepper , to taste

Instructions

1.Preheat barbecue grill to high heat.
2.In a bowl, combine ground beef, grated onion, pine nuts, hot pepper, garlic, soaked bread, egg yolk, salt, pepper, sweet paprika, cumin, and baking soda. Mix well and form the mixture into small patties on skewers.
3.In a small saucepan, heat the olive oil, date honey, balsamic vinegar, fresh ginger, brown sugar, beef broth, salt, and pepper over medium-high heat.
4.In another bowl, combine chopped parsley, olive oil, hot pepper, white vinegar, garlic, salt, and pepper. Mix well.
5.Grill the beef kebabs for 7-8 minutes, turning frequently, until fully cooked.
6.To serve, place a bed of chimichurri sauce on a plate and top with the kebabs. Drizzle silan ginger sauce over the kebabs.
