2 tablespoons adjust to taste red wine vinegar or 2 tablespoons apple cider
2 tablespoons pomegranate paste ( narsharab , available in Middle Eastern markets-adjust to taste )
3 tablespoons olive oil ( adjust to taste )
AZERI OLIVE-WALNUT-POMEGRANATE MEDLEY (Zeytun Perverde) is a traditional Azerbaijani appetizer that is popular in the Mediterranean region. Instructions

1.Toast the walnuts in a preheated oven at 180C (350F) for 8-10 minutes or until fragrant. Let them cool.
2.In a large bowl mix together the green olives, chopped onion, and pomegranate arils or dried cranberries.
3.Add the toasted walnuts and mix well.
4.In a small bowl whisk together the red wine vinegar, pomegranate paste, and olive oil. Pour the dressing over the olive and walnut mixture and mix until evenly coated. Adjust the amount of dressing to taste.
5.Cover and let it marinate in the fridge for at least 30 minutes before serving. Best served cold.
