Ingredients

6 small eggplants
1 glass kashk ( kashk is thick whey similar to sour cream , and should be purchased in Iran or at an Iranian store )
1 teaspoon tomato paste
2 medium onions
2 teaspoons dried mint ( or 200 grams of fresh mint )
cooking oil
salt
black pepper , as needed

Instructions

1.Wash the eggplants and slice off the stem. Leave the skin on and cut the eggplant lengthwise into halves or quarters depending on the size.
2.Heat some oil on high heat in a frying pan and fry the eggplants until browned on all sides. Transfer to a plate and let them cool down.
3.Meanwhile, heat some more oil in another pan on medium heat and fry one chopped onion until golden brown.
4.Add kashk, dried mint, and tomato paste to the pan and stir well. If the mixture is too thick, add a bit of water until it becomes creamy.
5.Mash the fried eggplants lightly and add them to the pan, stirring gently with the mixture. Add some water if needed and salt and pepper to taste. Let the mixture cook for 10-15 minutes until all the ingredients are thoroughly mixed and soft.
6.In another frying pan on medium heat, fry the other chopped onion until golden brown and crispy. Use as a garnish on top of the Kashekeh Bademjoon. Serve with rice or bread.
