Instructions

1.Preheat oven to 400F.
2.In a large bowl, mix together chopped roasted tomatoes, sun-dried tomato paste, minced serrano peppers or green finger chilies, minced shallot, minced garlic, cinnamon, turmeric, paprika, sea salt, black pepper, lemon zest and lemon juice until well combined.
3.Spread the mixture evenly into a roasting pan and roast in preheated oven until caramelized and slightly charred, about 20-25 minutes.
4.Serve hot or cold as a side or dip with bread or pita chips.
