Instructions

4.Add the onion and cook, stirring frequently, until browned, about 5-7 minutes.
5.Add the rice and cook, stirring frequently, for 1-2 minutes until coated in oil.
6.Add the thyme, garlic, cinnamon, salt, and pepper. Stir well to combine.
7.Add the water, balsamic vinegar, and currants to the pan. Bring to a boil.
8.Cover and reduce heat to low. Cook for 18-20 minutes or until the rice is tender and the liquid is absorbed.
9.Remove from heat and let sit for 5 minutes.
10.Fluff with a fork and stir in the chopped dill, mint, parsley, and pine nuts.
