1 large egg

Instructions

1.Preheat oven to 200F and line a baking sheet with paper towels.
2.Shred potatoes and place them in a clean kitchen towel. Squeeze out as much moisture as possible.
3.In a large bowl, whisk together 2 cups of the onions, egg, flour, salt, and baking powder. Add the potatoes and mix until well combined.
4.In a large skillet, heat a 1/4-inch of vegetable oil over medium-high heat. Working in batches, drop spoonfuls of the potato mixture into the hot oil and flatten with a spoon to create discs. Cook for 2-3 minutes on each side until golden brown and crispy.
5.Remove latkes from the skillet and place on prepared baking sheet to drain. Repeat with remaining potato mixture and oil.
6.For optional cranberry applesauce, combine the remaining 1/2 cup of onions, cranberries, apple slices, sugar, and water in a small saucepan. Bring to a boil and then reduce heat to low and simmer for 10-15 minutes, until the sauce has thickened and the cranberries have burst. Serve with warm latkes.
