Ingredients

1 whole chicken
1 cup white vinegar
1 teaspoon red chili powder
1 teaspoon black pepper
1/2 teaspoon salt
2 teaspoons garlic paste
1/2 lemon , juice of
1 - 1 3/4 ounce whole red chile
1/2 teaspoon salt
1 teaspoon ajwain
2 teaspoons fennel seeds
2 teaspoons cumin seeds
2 tablespoons coriander seeds
lemon juice , for sprinkling
Chicken Sajji Masala is a popular dish in Balochistan, a province of Pakistan. It is usually prepared on special occasions and gatherings, mainly in the southwestern part of the country. The recipe involves marinating a whole chicken with a spice mixture and baking it in the oven. The dish is usually served with bread, rice, and raita. Not only is this dish tasty, it also represents the flavors and culture of Balochistan.

Instructions

1.In a mixing bowl, combine white vinegar, red chili powder, black pepper, salt, garlic paste, lemon juice, and one whole red chili pepper. Mix all the ingredients well.
2.Make two longitudinal slits on chicken's breast and one on each leg. Apply the spice mix onto the chicken and inside the slits.
3.Leave it aside for 2-3 hours or refrigerate it for 6-7 hours.
4.Preheat the oven to 350°F/180°C, place the marinated chicken on the grilling rack and bake in the oven for 45-50 minutes.
5.Meanwhile, dry roast ajwain, fennel seeds, cumin seeds, and coriander seeds and blend them into a fine powder.
6.Brush the baked chicken with some ghee and sprinkle the roasted spice powder and lemon juice. Serve hot with naan, rice, and raita.
