Ingredients

1 1/2 cups chopped almonds ( I use blanched )
1/2 cup shelled unsalted pistachio nuts , chopped
1/8 cup white sugar
1/4 teaspoon cardamom , freshly ground ( I use a mortar & pestle )
16 sheets phyllo dough
1 cup sweet butter ( unsalted , melted , you may not use it all so melt as needed if you wish , as I do )
scant cup sugar ( I reduced slightly from 1 cup )
1/2 cup water
1/2 tablespoon lemon juice , freshly squeezed
1/2 - 1 teaspoon orange blossom water
Persian Spiced Baklava Rolls With Orange Blossom Syrup is a traditional Persian dessert that has become popular around the world. Baklava is a sweet pastry made with layers of phyllo dough and nuts, usually almonds or pistachios. It is then drenched in a syrup made with sugar, water, and citrus. Instructions

1.Preheat oven to 325°F.
2.In a medium-sized bowl, combine chopped almonds, chopped pistachios, white sugar, and freshly ground cardamom. Set aside.
3.Lay out one sheet of phyllo dough. Brush with melted butter.
4.Layer another sheet of phyllo dough on top. Brush with more melted butter.
5.Sprinkle 2-3 tbsp of the nut mixture onto the second layer of phyllo dough. Spread evenly.
6.Roll up the phyllo dough tightly, tucking in the sides as you go.
7.Brush the outside of the roll with more melted butter.
8.Cut the rolls into 2-inch pieces. Place onto a lightly buttered baking sheet.
9.Bake for 20-25 minutes, or until golden brown.
10.While the baklava rolls are baking, prepare the syrup. In a medium-sized saucepan, combine sugar, water, and freshly squeezed lemon juice. Bring to a boil.
11.Reduce heat and simmer for 10 minutes, or until syrup has thickened slightly.
12.Stir in orange blossom water.
13.When the baklava rolls are finished baking, pour syrup over the top.
14.Allow the rolls to cool before serving.
