Ingredients

1 eggplant
salt
oil ( for frying )
2 cans plum tomatoes
2 tablespoons oil
1 medium onion
1 1/2 teaspoons cumin
3/4 teaspoon paprika
1/4 teaspoon turmeric
1 dash salt
1 dash pepper
1 dash cayenne
3 garlic cloves

Instructions

1.Cut the eggplant into 1 inch cubes and sprinkle salt over it. Set aside for 30 minutes to remove excess moisture.
2.In a pan, heat enough oil for frying and add the eggplant. Fry until brown and place on paper towels to drain excess oil.
3.In a separate pan, heat 2 tablespoons of oil and add the chopped onions, cumin, paprika, turmeric, salt, pepper, and cayenne. Fry for a few minutes until the onions start to become translucent.
4.Add the canned plum tomatoes and garlic. Let it simmer for a few minutes.
5.Add the fried eggplant and mix well. Cover the pan and let it cook on low heat for 20 minutes.
