Ingredients

2 cups finely chopped onions , divided
1 large egg
1 1/4 teaspoons coarse kosher salt
1/4 teaspoon fresh ground black pepper
2 lbs russet potatoes , peeled , cut into 1-inch pieces
1 tablespoon all-purpose flour
1 teaspoon baking powder
vegetable oil ( for frying )
6 tablespoons olive oil
2 tablespoons sherry wine vinegar
1/4 teaspoon dry mustard
2 large bunch watercress , thick stems trimmed ( about 8 cups )
1 large avocado , pitted , peeled , diced
4 ounces thinly sliced smoked salmon , cut into strips
Potato latkes are a traditional Jewish dish often eaten during Hanukkah. In this recipe, we add a twist to the classic recipe by pairing it with watercress, avocado, and smoked salmon. Latkes are made by shredding potatoes and mixing them with ingredients like onions, eggs, and flour. They are then fried and served crispy and golden-brown. The combination of salty smoked salmon and creamy avocado pairs wonderfully with the crispy latkes and peppery watercress. This dish is perfect as an appetizer or light meal.

Instructions

1.Preheat the oven to 250 degrees F.
2.In a large bowl, mix together 1/2 cup of the onions, egg, 1 teaspoon of the salt, and pepper. Add the potatoes and mix well. Add the flour, baking powder, remaining onions, and remaining salt and mix well.
3.Heat 1/2 cup vegetable oil in a large skillet over medium-high heat until hot but not smoking. Working in batches and adding more oil as necessary, drop heaping tablespoons of the potato mixture into the hot oil and flatten with the back of a spoon. Fry, turning once, until golden brown and cooked through, about 4 minutes per side. Transfer the latkes to a paper towel-lined platter to drain.
4.In a small bowl, whisk together the olive oil, vinegar, mustard, and salt and pepper to taste. Toss the watercress with the dressing and divide among 4 plates. Top with the avocado and smoked salmon, then the warm latkes. Serve immediately.
