8 free range eggs , separated
1 cup sugar , divided
1 1/2 cups ground pecans
1 teaspoon cinnamon
1/3 cup orange juice
1 teaspoon orange flower water
1 orange , zest of , grated
1 pinch salt
1/2 cup water
1 1/2 cups sugar
3 tablespoons honey
1 teaspoon orange flower water
1 teaspoon lemon juice
This Middle Eastern Pecan Cake is a unique and flavorful dessert that is perfect for any occasion. Instructions

1.Preheat the oven to 350°F (180°C) and line a 10-inch (25cm) cake tin with parchment paper.
2.In a large mixing bowl, beat the egg yolks and 1/2 cup of sugar together until pale and thick.
3.Add ground pecans, cinnamon, orange juice, orange flower water, and grated orange zest, and mix until well combined.
4.In another bowl, beat egg whites with a pinch of salt until stiff peaks form.
5.Add remaining 1/2 cup of sugar gradually while still beating egg whites, until they become shiny and hold peaks.
6.Fold egg whites into the egg yolk mixture until well combined.
7.Pour cake batter into the prepared cake tin and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
8.For the syrup, combine water, sugar, honey, orange flower water, and lemon juice in a saucepan.
9.Cook over low heat until sugar dissolves. Increase heat and simmer for another 5 minutes or until syrup thickens.
10.Prick the cake all over using a toothpick. Pour the syrup over it and let it cool. Serve and enjoy!
