Ingredients

2 lbs sea scallops
4 cups couscous , cooked ( I like to use a garlic couscous , but plain will be just fine , also I like to cook mine in chicken br )
3 cups Baby Spinach
1 medium onion , cut in quarters and thin sliced
3 scallions , thin sliced
1 teaspoon minced garlic
2/3 cup chicken broth
1 1/4 cups half-and-half
2 1/2 teaspoons tomato paste
2 teaspoons curry powder
2 tablespoons fresh cilantro , chopped fine ( parsley will work also )
3 teaspoons butter
1 teaspoon olive oil
salt
pepper

Instructions

1.Add the chicken broth, half-and-half, tomato paste, and curry powder into a pan and bring to a simmer.
2.Let the mixture simmer and thicken for about 10-15 minutes. Stir in the fresh cilantro, then remove from heat.
3.Sprinkle salt and pepper over the scallops.
4.Heat a skillet over medium-high heat and add olive oil.
5.Sear the scallops in the skillet for 2-3 minutes on each side, or until lightly browned.
6.In another skillet, sauté onions and garlic over medium heat until onions are translucent. Add scallions and baby spinach, tossing until they begin to wilt.
7.Serve the scallops over a bed of couscous and topped with the sautéed spinach mixture. Drizzle the curry sauce on top. Enjoy!
