Instructions

.Score the peels of the oranges into quarters and peel off the skin and pith from the fruit. Cut the peels into strips about 1/4 inch wide.
.Place the peels in a medium saucepan and cover with cold water. Bring to a boil over high heat. Drain.
.Repeat the boiling process two more times.
.In a clean medium saucepan, combine 2 cups water, 2 cups sugar, and the lemon juice. Cook over medium-high heat, stirring until the sugar dissolves.
.Add the orange peels to the sugar syrup and reduce the heat to low. Simmer gently until the peels are translucent and tender, about 45 minutes.
.Using a slotted spoon, remove the peels from the syrup and place them on a wire rack set over a rimmed baking sheet. Let dry for at least 2 hours or overnight.
.Line another rimmed baking sheet with parchment paper.
.Melt the chocolate and oil in a medium heatproof bowl set over a saucepan of simmering water, stirring occasionally until smooth.
.Working with one peel at a time, dip the peels in the chocolate, allowing any excess to drip back into the bowl.
.Place the chocolate-coated peel on the prepared baking sheet.
.Let the peels stand at room temperature until the chocolate is set, about 2 hours.
.Toss the peels in sugar to coat. Serve at room temperature.
