Ingredients

4 garlic cloves , chopped
2 teaspoons ground cinnamon
2 teaspoons ground cumin
1 tablespoon dried oregano
1 lemon , quartered , pips removed
1 1/2 kg leg of lamb
2 red onions , cut into wedges
1 liter pomegranate juice
2 tablespoons clear honey
250 g natural yogurt
100 g pomegranate seeds or 100 g seeds from 1 fresh pomegranates
1 small handful mint leaf , chopped
This slow-cooked lamb dish is a unique and flavorful way to enjoy a traditional Sunday roast. The dish is seasoned with a blend of spices and marinated in pomegranate juice that is slow-cooked to perfection. The result? Instructions

1.Preheat the oven to 220C/200C fan/gas 7.
2.Mix together the garlic, cinnamon, cumin, oregano and some seasoning. Use a small sharp knife to make little cuts all over the lamb, then rub the spice mixture all over the meat.
3.Put the lamb in a large roasting tin with the onions and lemon wedges, then pour over the pomegranate juice. Roast for 20 minutes, then reduce the oven to 160C/140C fan/gas 3 and roast for another 3 hours 30 minutes, basting occasionally, until the meat is really tender.
4.Meanwhile, simmer the honey in a small pan for a few minutes until it starts to thicken, then stir in the yogurt and set aside.
5.Remove the lamb from the tin and leave to rest on a warm platter under foil for 15-20 minutes.
6.Skim any fat from the juices in the tin, then put the tin on the hob over a medium heat. Leave the juices to bubble for a few minutes until thickened and sticky – you should be left with about 200ml. Pour the juices through a sieve into a small saucepan then stir in the honey and yogurt mixture. Heat through gently, then stir in the pomegranate seeds and mint.
7.Carve the lamb into slices and serve with the sticky pomegranate glaze.
