3 lbs lamb , cut 1 1/2 '' cubes
1/2 lb butter
1 onion , chopped
1 1/2 lbs tomatoes , peeled and strained or 1 tablespoon tomato paste , diluted with 1 cup water
salt and pepper
8 cups water
4 cups raw rice

Instructions

1.In a large Dutch oven, melt butter over medium heat.

8.Simmer for 45 minutes.
9.Add the rice to the pot and stir to combine.
10.Cover the pot with a tight-fitting lid and cook for an additional 25-30 minutes, until the rice is tender and the liquid is absorbed.
