3 tablespoons cilantro , chopped
sesame seeds
pita bread or chips , for serving

Instructions

1.Preheat the oven to 425°F. Line two baking sheets with parchment paper.
2.In a bowl, toss the sliced cauliflower with olive oil, ginger, coriander, and kosher salt until well coated. Divide between the two baking sheets.
3.Roast for around 25 minutes, tossing occasionally, until tender and golden brown.
4.In a bowl, whisk together tahini, lemon juice, and 1 tablespoon of water until smooth. Season with salt.
5.In a blender, blend the roasted cauliflower with the tahini mixture until smooth. If needed, add a tablespoon or two of water to help blend.
6.Transfer the spread to a bowl. Sprinkle with sesame seeds and cilantro.
7.Serve with pita bread or chips.
