Ingredients

2 cups sugar
1 cup water
1 tablespoon lemon juice , freshly squeezed
1 teaspoon orange blossom water ( or rose water )
20 sheets phyllo pastry
2 cans cream ( plain qashta , from Middle Eastern shops )
3/4 cup unsalted butter , melted ( sweet butter )
ground pistachios , for decoration
1 1/2 teaspoons orange blossom water ( or rose water or I have used both too )
1 1/2 teaspoons white sugar
Ward El Sham is a sweet treat from Syria that is popular throughout the Middle East. It features layers of phyllo pastry filled with a rich, sweet cream known as qashta. The filling is often flavored with orange blossom or rose water syrup, which gives it a fragrant, floral aroma. This dessert is perfect for those with a sweet tooth, as it is truly indulgent and delicious. The crispy phyllo pastry is a perfect contrast to the creamy qashta filling, and the syrup adds just the right amount of sweetness. If you're feeling daring, you could even try making your own qashta from scratch!

Instructions

1.Preheat oven to 350°F. Grease a 9×13 inch baking dish with butter or cooking spray.
2.Combine sugar, water, lemon juice, and orange blossom/rose water in a saucepan and bring to a simmer over medium heat. Cook for 10-15 minutes until the sugar has dissolved and the mixture has thickened slightly.
3.Combine the qashta and orange blossom/rose water in a bowl and stir until fully incorporated.
4.Begin layering the phyllo sheets in the baking dish, brushing each sheet with melted butter as you go. Once you have used 10 sheets, spread the qashta mixture evenly over the top of the phyllo.
5.Cover the qashta with another 10 sheets of phyllo, again brushing each sheet with melted butter. Save the remaining butter for later.
6.Cut the phyllo into small diamond or square shapes. Pour the remaining melted butter over the top of the phyllo.
7.Bake for 35-40 minutes until golden brown and crispy. Remove from oven and allow to cool completely before serving. Serve sprinkled with ground pistachios and a dusting of sugar.

While this sweet is definitely not a health food, there are some benefits to using rosewater or orange blossom water in your cooking. Both ingredients are known for their mild anti-inflammatory and antibacterial properties. Rosewater is also high in vitamin C, while orange blossom water contains vitamin A and other antioxidants.
