Ingredients

4 large fresh poblano chile peppers
4 lobster tails
4 tablespoons butter , divided

Instructions

1.Preheat oven to 400°F. Cut the poblano peppers in half lengthwise and remove the seeds and membrane.

5.Remove the skillet from the heat and stir in the beaten egg.
6.Stuff each pepper with the onion-egg mixture. Add a lobster tail to each pepper.
7.Melt the remaining 2 tablespoons of butter and brush it over the tops of the lobster tails.
8.Return the peppers to the oven and bake for an additional 15-20 minutes or until the lobster meat is cooked through.
