7 1/2 cups chicken stock ( see below )

1/3 cup rice , washed , or 1/3 cup italian pastina , or 1/4 cup tapioca
3 egg yolks or 2 whole eggs
1 -2 lemon , juice of
2 teaspoons finely chopped parsley ( optional ) or 2 teaspoons finely chopped chives ( optional )

Instructions

5.Slowly add a ladleful of hot chicken stock to the egg-lemon mixture, while whisking continuously to temper the eggs and prevent curdling.
6.Continue to add the hot stock to the egg-lemon mixture, whisking until fully combined.
7.Pour the egg-lemon mixture into the soup pot, stirring continuously, and cook on low heat for 2-3 minutes until the soup thickens slightly.
8.Remove from heat and sprinkle with chopped parsley or chives, if desired.
9.Serve hot.
