1 pinch cumin
2 tablespoons parsley
8 pita bread

Instructions

1.Preheat the oven to 400F.
2.Cut the eggplant in half lengthwise and score the flesh diagonally. Drizzle with olive oil and roast in the oven for 40-45 minutes or until tender.
3.Once the eggplant is cooled, scoop out the flesh and place it in a food processor.
4.Add in the tahini, garlic, lemon juice, olive oil, and spices. Puree until smooth.
5.Adjust seasoning to your taste with salt, pepper, or more lemon juice if needed.
6.Serve with fresh parsley and pita bread.
